Mozzarella experience - Amalfi Coast
To this day Biagio, on the Amalfi Coast, continues to follow this family's historic cheese-making traditions using the excellent ingredients and artisan methods that come from the beautiful Monti Lattari (the mountains along the Coast).
Most cheesmaking on the Amalfi Coast takes place in a fertile highland valley, where cows and flocks of sheep and goats are still a common sight. Biagio is the welcoming owner of one of the few cheese factories right on the Amalfi Coast. Located right in the heart of Ravello, he is the fifth generation in a family of cheesmakers, and with the help of his mother Maddalena, Biagio continues the local traditions of artisanal cheesmaking in what is more a small workshop than a factory. The store is on the street level, below the laboratory. Here, twice a day he combines the precious fresh milk products to create the delicious mozzarella.
In addition to the traditional Fior di Latte in various shapes, Biagio also makes creamy ricotta, using whole milk easily rather than just the curds to produce a smoother consistency; caciocavallo, a classic local seasoned cheese, easily identifiable from its figure of eight shape, and little caciottine (fresh cheese ball!).
